I recently wrote a book ( in Korean) and I was able to contact with a literary agency.
But they told me that the book will be published in December.
I’m going to apply for SCEA, and I was wondering if I could write about it on my application as an EC.
Should I write it as ‘Author of a book called … (will be published in December)?’ or something else?

Just like scientific publication, you may denote it as “in press” after the title once it has been accepted for publication.
Yes, you can say it is in production and give a release date.
