<p>Since there have been so many foodie threads lately, I thought I would start one more.</p>
<p>Any one have any creative yet simple recipes for a person to take to a small women’s meeting 10-12 so brunch type food, probably 20 women and each meeting the food providers seem to want to outdo the prior week’s menu ;)</p>
<p>Quiche? They’ve kind of gone out of style, but I love them. Or deviled eggs. Or tea sandwiches - with fillings like smoked salmon, or cucumbers or tomatoes. (Cut off the crusts and cute into fourths.) I also like to take pastry cups and fill them with vanilla yogurt and fresh fruit.</p>
<p>Oo, I have the perfect one, and so easy! Focaccia bread sticks with tomato sauce dip.</p>
<p>I use the pizza crust mix in the pouch, but you can use the refrig. pizza crusts.<br>
Follow recipe for mixing, and then roll and twist into long sticks. Place on cookie pan greased w/ olive oil. Sprinkle with garlic salt and parmesan cheese and let rise.
Pop in 450 oven for 12-15 minutes, or until brown.
Place on platter, sprinkle w/ more garlic salt and/or parmesan, to your taste.
Dump prepared (I use gourmet organic) tomato sauce into a bowl, and top with fresh basil leaves.</p>
<p>Everyone loves them! I bring them to events at school and the kids snap them up. It’s a good alternative to sweets.</p>
<p>apple tarts-in the last Barefoot Contessa cookbook there is a super easy apple tart recipe. Basically it is rolled out puff pastry topped with sliced green apples sprinkled with sugar and dotted with butter. You bake it till the pastry puffs. Bring it whole and slice at the brunch or slice it at home with a pizza cutter into squares. It tastes great, looks like you worked hard yet can be thrown together quite quickly.</p>
<p>I did some ham/apricot pinwheels for a recent Bridal Shower…spread cream cheese, then apricot preserves on tortillas, top with ham, roll up. Slice into pinwheels, top with diced dried apricots, I garnished with mint. They were a big hit.</p>
