how does it work? i.e. what # ranges are taken in what year/term, on average?

As a general rule…

<100 means undergraduate classes
100-200 are typically taken by both undergraduate and grad students
200+ are uuper level grad courses

That said the numbering varies widely by department, etc…so there are courses nubered 100+ whicha re exclusively undergraduate and others which are required of both undergraduate and grad students (eg ph 106/125)…of course, lots of undergrads take upper level graduate courses etc.

So basically, the numbering system doesnt mean anything.

If you have specific questions about when certain classes are better to take people here will probably be able to answer.
