Just curious, can you accept after the May 1st deadline - say if you have a change of heart from where you originally accepted? I have heard that some schools still check in after May 1st to see if students want to go there.

Normally no. The deadline is May 1 if that is stated
And typically that is also the housing deadline.
Not what you asked but there are schools still accepting applications if your student is not happy with their options.
The advice above is correct. If, however, there are two schools between which someone is having a hard time deciding, they may inquire with the admissions office if they can have an extension (including holding their scholarship). Whether the admissions office will grant the extension or not is unknown, but it is a possibility.
For grad school I was debating between two schools and finally just went with one because I had to decide for May 1. A couple of days later I felt like the other school would have been a better place for me and reached out to the other school. That department said that they had already given my funding away, but that had I asked them ahead of time, they could have waited. Obviously, this is grad school compared to undergrad, but I think it’s at least worth asking the question to the admissions offices so there are no regrets later on, “If I had only known.”
Is by may 1 technically by midnight tonight or 1159 tomorrow. One school sent explicit time, the others just say by
11:59 your time on May 1 (generally your local time, in the absence of other direction.) Don’t wait until the last minute .
Some schools have a hard cut-off on May 1 for the deposit, some don’t. The ones that don’t are likely still taking apps (there are more schools still taking apps than the ones listed at the above link.)
Yes, some do. But it’s entirely up to the school. Most won’t pursue students after the commitment deadline, so don’t count on it.
