<p>I just made a buffalo burger for lunch. It was tasty, but I think that had more to do with the spices and sauce I used than the fact that it was buffalo.</p>
<p>Allowing for the different amounts of fat, can you tell the flavor of one from the other?</p>
<p>Its been a couple of years since I had buffalo but I remember it as tasty and very similar to beef. It wasn’t gamey or anything. I know it is suppose to be much more healthier to eat, low in fat and all that. We always have some when we are out west.</p>
<p>The only way I have ever made it was in the form of meatloaf, and everyone loved it. Again , it could have been all of the stuff I throw in , but it seemed very lean and fresh tasting…like ground beef only better</p>
<p>Because of my husband’s heart condition, we only eat buffalo (bison) meat now. I use it for burgers, meatloaf, chili, etc. We all like it just as much as ground beef – even our picky kids. They certainly find it much more acceptable than ground turkey, because I think the whitish color of ground turkey is off-putting. I think it has a slightly stronger taste than ground beef, but it’s hardly noticeable once cooked in a dish with spices.</p>
<p>The buffalo is just the native North American version of the cow. So it would be surprising if they were markedly different. The buffalo I’ve eaten tasted pretty much the same as beef.</p>
<p>Ours is from Whole Foods or another, regional market with a similar theme. $5.99/lb. But I’m not going out of my way to get ground buffalo again; the lack of fat actually makes kind of a lame hamburger. The nice flavor seemed to come from the many spices I added, not from the meat itself. (I use smoked paprika in burgers. It imparts a bold, hearty flavor that pairs well with red meat.) But I do wonder if perhaps there’s a subtle difference that I’m just not trained to tasted.</p>
<p>We’ve only had buffalo a few times & it was generally in stew or chili. I believe we once had buffalo steak. It seems a bit leaner than beef, but otherwise the flavor is pretty similar (to the best of my memory).</p>
<p>I’m guessing that buffalo or the hybrid beefalo are all grass fed instead of spending the last 3 months of their lives on a feedlot eating corn. I think you would have to compare the buffalo with a grass-fed beef for the taste test to be accurate (disclaimer - just read “The Omnivore’s Dilema” by Michael Pollan - kind of puts you off commercial beef. I may be searching for buffalo now.)</p>
