ChemE directions

There are so many directions to go with a ChemE degree. What is the best market to focus on? I’d like to get opinions:
Energy? Environmental? Biofuels? Materials (Polymers)? Pharmaceuticals? Consumer Products?
Something else?
Second question:
If your first job out of school is in x, does that label you forever?
Oh, he just made soap for two years, so he can’t make beer or purify water or work on fuel cells, etc. Or is the degree more important than the “first job” experience: Yeah, he’s got a BS so although he started out generating power from natural gas of course he can design a plant to make resin or corn flakes, etc. I am worried about how selective you should be on your work experience. In this economy, you may not be able to direct your career right off and may have to settle for what you can find until things get better.
