As another hater of dark meat chicken, you would not be able to fool me and I bet your husband will be the same. Unfortunately, I passed the dislike of dark meat on to my daughter; at least we don’t have to fight for the breast with my husband and son as they both will eat dark meat!

I love the taste of drumsticks and thighs. What I can’t stand is the numerous pockets of fat in chicken thighs. Even spicy sauces won’t disguise that! I spend about 5 minutes per boneless thigh scraping and cutting to get it all off.

Once I get the gaggy fat off, I like to marinate in yogurt, garlic and stone ground mustard, then shake off the excess marinade and roll in panko bread crumbs and bake.

But I agree that if he dislikes the taste, better to not try to disguise it nad just have alternatives. Your plan sounds like a good one.

Reporting back- I came home before my Pilates class and put the thighs in the instant pot with a small can of enchilada sauce. I shredded it when it was done and put it in the refrigerator. I assembled the bowls instead of letting him make his own. Bottom layer farro which he loves, refried beans which he also loves, roasted onions, peppers and eggplant. I put a smaller serving of the chicken off to one side. I aimed for the pieces that looked more breast like. I put a nice sized roasted jalapeño next to the chicken. Next went fresh tomatoes, cilantro and grated cheese. He added another round of spice by putting on habanaro sauce. I think by adding all the toppings he didn’t really see the chicken. Plus the enchilada sauce I think helped. He didn’t realize he was eating thigh meat.
Should I feel bad I tricked him. Because I gave him such a small a,punt of meat I have quite a bit of leftovers. I think I might put it in enchiladas or tacos tomorrow night. Or I might just give it to a friend who will appreciate it.
I appreciate all the recipes and will try them but with breasts. I’m always looking for new ways to make chicken.
@showmom858 - I’ve made a couple of the chicken recipes from the Nom Nom Paleo website. She has a couple of cookbooks.

NY Times has a great recipe called chicken and shallots. I’ve attached the recipe. The only change I would recommend is using chicken broth instead of wine. The wine makes it too acidic. Also recipe calls for bone in thigh and I have used boneless thighs, boneless breasts etc. It works with whatever you have on hand. Its absolutely delicious, easy and I serve it with egg noodles or crusty bread to soak up the gravy.

I started to eat thighs this summer and we all love this recipe. We feel it actually tastes better than if it was on a Breast. This rub is for 8 thighs…you mix the rub together and then “shake and bake” it in a ziplock bag first. Bake at 350 for 90 minutes (1.5 hours)
