I don’t eat chili,but need to feed a group next weekend. Can anyone share a tested recipe?
I made chili in my crock pot yesterday!
I used ground beef but usually I used half ground beef and half ground turkey.
So…the put the meat in the crock pot…and break it into pieces.
On top, put a can of garbanzo beans, a can of whole kernel drained corn, two cans of tomatoe paste (the little ones), 3 cans of tomatoe sauce (the little ones), one diced green pepper, 1/4 onion chopped, and 4 carrots peeled and sliced.
I season with chili powder, cumin, and ellepo peppers from Penzys.
Adjust amounts to suit your crowd and sort of fill your crock pot.
Cook for 10 hours on low.
Serve with cornbread.
I cheat and use Wick Fowler’s 2 Alarm Chili mix. It’s easy and I follow the direction on the box. Things I do: I add a small can of tomato paste and a can of black beans (rinsed) along with the other ingredients. I also don’t use all the red pepper or salt. 2 alarm is a little too spicy for us.
I like Wick Fowler’s as well adding only a little of the red pepper packet but also adding some extra cumin , some unsweetened chocolate or cocoa, and a pinch of cinnamon.
Just had chicken chilie tonight. I think the following are great for a chilie. Meat ( whatever kind you want), beans ( again any kind- kidney, pinto, black,etc or a combination. BTW, I add the beans at the end. So maybe an hour before serving) some onion, green pepper, and tomatoes and several cans of tomatoe sauce. Then you need to spice it. S & P, garlic ( fresh is also good), cumin and chilie powder. I also like to add chopped green chilie ( from a can is easier or you can roast fresh).
I do not go lightly on the spices. I add some when cooking the meat and some after adding the sauce. Then after a while, I taste and usually add a bit more.
People usually rave about my chilie. I really think it is the spices. And it is not spicy hot. I put a hot sauce on the table if people want to make it spicy hot. Other garnishes include shredded cheese, tortilla chips, sour cream, rice.
