Slow Cooker Chicken Fajitas
for 10 servings
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
FOR SERVING
flour tortilla or rice
cheese
sour cream
guacamole
Salsa
Preparation
Add half of the sliced peppers and onions to your slow cooker.
Layer the chicken and coat all sides with taco seasoning.
Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
Add the remaining peppers and onions, cover and any remaining lime juice.
Cook on high for 3-4 hours.
Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
Return the shredded chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
Assemble Fajitas to your liking - recommend topping with cheese, sour cream, and guacamole…and salsa.

Don’t do that holiday- it was never a thing in many parts of the US until fairly recently. It has always been H’s birthday and his favorite Indian foods. Do Mexican foods other days as we feel like it. There are other cultural holidays to celebrate depwnding on where you live and your ethnic background. Think May 17th…
I live in Texas and have never cooked a meal to commemorate Cinco de Mayo. Because I picked up some avocados last week, I was planning to make chicken fajitas and guacamole tonight. Lol, I am a day early. It never occurred to me to serve this specifically for tomorrow night.
A local pub type restaurant that we love and are trying to help support is doing a Cinco de Mayo family takeout deal with way too much food for two people - tacos, quesedillas, burritos, chips/salsa/queso - but we are going for it anyway. Will be eating many leftovers. And with every order, up to four margaritas at $1 each!
We are doing our Cinco De Mayo tonight. We’re re-naming it “May the For(ce)th be with you on Cinco De Mayo”. The weather will allow a socially distanced dinner with my son and his wife so tonight it is.
It’s also Meatless Monday for me though so I plan to make bean and cheese enchiladas and then have some chicken on the side for the meat eaters. Guac. I have queso. Salad. Margaritas made by D2.

Gonna do “cuatro de Mayo” while H and I have a webex with the S, D, their spouses, my mom, and my brother. (cuz it sounds fun…and…its my birthday) Planning on ordering some nachos and blending some margaritas.
I used to make slow cooker fajitas, and love them, but I found I prefer to saute the ingredients over high heat to keep the veggies a little more crisp/tender. Both ways, it is tasty, though!
Tomorrow, we are having grilled pollo asada, chilaquiles, beans and homemade guacamole. Yum!

Celebrated yesterday as husband has to work on Tues. We had chicken, white bean salsa verde enchiladas with cheese, sour cream, and tomato toppings. Sliced Avocado and mango. Made some margaritas!
Mango! What a great idea! I am going to look for one during old folks shopping hour tomorrow morning.
No special meal tomorrow but we eat Mexican food multiple nights a week. I’ve been getting really good mango lately. Ive been making simple mango salsa the past couple of weeks. This weekend we had tostadas and margaritas.
Went shopping sooner than anticipated and they had a great selection of ripe avocados! Taco Tuesday for sure.

Whole Foods has had super delicious mangos - 5/$5. I keep laughing that I can’t buy flour, yeast, fresh garlic, some other basic pantry items but no problem getting plenty of wonderful, cheap imported mangos!
We celebrated on Sunday with takeout from our neighborhood place and a lot of margaritas.
