I chose my senior classes as a junior and i regret choosing so much of easy classes. 3 of my classes are really easy computer classes. The college I want to apply to has an avg act 28 and I currently have a 26, but Im going to take the upcoming Oct. date. My question is that first quarter is ending in 5 days and if i should switch one of my courses to an AP or more harder class, will that increase my chances of admission if i am applying early action?
Yes. definitely change to a harder class if you can handle it. Colleges love that.

Talk to your guidance counselor and see if you can switch into an AP class at this late date. You may have missed too much material in the AP class to switch in and do well. I don’t think one AP course will make a huge difference in terms of college admissions.
Did you file a letter of intent for College Credit Plus last spring with your high school? It isn’t too late to apply to some of the colleges with College Credit Plus programs to add a Spring class (online or evening). The deadlines are coming up quickly (our local option’s deadline is Nov 1) to have a college credit plus application reviewed and register for a Spring course. A good grade in a college level class (especially if you can manage to do it at your first choice in state option) can be a big positive.
