Cod For Dinner - quick, simple recipe?

Probably sounds pathetic, but I don’t tend to cook a lot of fish myself. Have some frozen cod and I just want to cook it simply - pan or oven (preferred). Simple ingredients I would likely have at home. Lemon? Parsley?

Dinner is in 2 hours. Let’s see what you’ve got. :)

This looks good…

Hi ya abasket:

Depends on what you have on hand at home.

You could bread it with bread crumbs and parmasean cheese that has some seasoning added it it. Either pan saute or stick in oven to bake

You could use teriyaki or soy sauce mixture with garlic and again either pan saute or oven bake

the recipe is a good one to add crushed almonds or any nut…dill is great with fish…

Just don’t overcook the fish because it will finish cooking a minute or so after you take it out of the pan

Experiment with any type seasoning or sauce and it’ll probably come out fine and then add lemon juice at the end…I’ve even sauteed tomatoes, spinach with sauce and then sauteed the fish and added to the plate altogether…

Sounds yummy, enjoy!

I do have a little dill…and lemon at the end, not during?

Stick it in the oven topped with olives, tomato, basil, garlic and a bit of olive oil. Cook 10 minutes or so at 400. For more ideas Mark Bittman did a 12 ways to cook white fish a while back: http://www.nytimes.com/2011/04/03/magazine/mag-03Eat-t.html</a> All the ones I’ve tried so far have been very good. :)

Panko crumbs taste great.

I always squeeze a little lemon juice on the fish before I bread it in panko crumbs. I would love the olives, tomato, basil, and a bit of olive oil.

I do what mathmom does and it is wonderful. I’ve also grilled the fish with a light brush of olive oil, salt and pepper, then added a similar topping of finely diced tomatoes, garlic and capers after it comes off the grill.

Whole Foods sells a olive oil with lemon - from the Amalfi Coast of Italy that is another quick finish for fish - drizzle it on after it comes out from under the broiler or off the grill.

I do have to try Mathmom’s recipe. I ended up using much of the recipe that I linked above. Melted butter in pan, tossed some diced onion on top of the butter. Cod on top and seasoned with dill, a little salt and pepper. Mixed up some fresh parmesan with just a little mayo, fresh parsley and lemon juice. Topped the fish. Baked till done then put some thinly sliced almonds (actually the ones you use to top a salad) and a little more lemon cause I like the taste. It was good! Will buy cod again and also would be curious about the teriyaki and garlic recipe.
