<p>Hi all! It’s been a while since I’ve checked in here. I wanted to wish you all a Happy Thanksgiving and Happy Hanukah. </p>
<p>Also, my DH tested out a new latke recipe over the weekend. Same mixture as always but you cook it in a waffle maker (after spraying the waffle maker with Pam spray). Same great taste and no oil! We are making them again for a family party this weekend. Your house doesn’t smell like oil and you don’t feel nearly as guilty eating them. Let me know if you want more info. (My DS, home from college, suggested using the Snoopy waffle maker but I think we will pass on that idea!)</p>
<p>LINYMOM, please share this recipe and let us know how it worked out for the family party. I am sticking to the pan fry this year, but would be interested in knowing how to do this for the future.</p>

<p>Linymom, you know my desperation by now. On top of the vegetarians and the high protein people, I have the kosher section and the low fat group. Just download your whole cookbook already, lol.</p>

<p>Here’s what DH said: </p>
<p>Really it is whatever recipe they use, but use a waffle iron sprayed with PAM instead of frying pan with oil.</p>
<p>His recipe was out of his head (the amount was just for his trial last weekend):</p>
<p>3 shredded potatoes
1/2 shredded large onion
3 eggs
garlic powder
salt
pepper</p>
<p>Put the shredded potatoes and onion in one bowl and then squeeze out as much water as humanly possible. Beat the eggs and mix eggs and rest of the ingredients in the bowl. Turn on waffle iron ahead of time to get to maximum temperature. Spray waffle iron with PAM, spoon in mixture (note to this: waffle iron has to close). Cook for ten minutes. Use
regular condiments to put on Waffle Latke when done. Enjoy

<p>Happy Hanukkah to all! One of the attorneys I work with said one of his paralegals gave him a gift for Hanukkah – the Mensch on the Bench (like the Elf on the Shelf). He said it’s a guy right out of Borough Park, sitting on a bench, and his employees told him he has to move it around his office.</p>

<p>Happy Thanksgivukkah to all! The best latke tip I have is to buy a bag of Simply Potatoes instead of peeling and shredding the potatoes yourself. It makes the job much easier, and the latkes are great.</p>

<p>As someone who has to limit oily foods, it was great to eat without worrying how I’d feel later.</p>
<p>And the miracle is…the leftovers will last for eight days…</p>

I am sooo glad that the big meal is behind me. I had vegetarian, lactose-intolerant, and generally picky eaters at the table this year. I was near having a nervous breakdown.</p>
<p>It went pretty well. I think the least eaten part of the meal was the turkey!
I will continue to make latkes to the bitter end.</p>
<p>So, we are deep into the college search for D (HS class of 2015). Looking for urban, near NY, true B-student range.</p>
