There are a few clubs I really started my sophmore year; however, I have been attending a few info sessions and general meetings and have been on the club’s mail list since freshmen year. Is it okay to say I’ve been doing the club since freshmen year or do I have to put since sophmore?

Be truthful. Attending an information session is NOT the same as being an active member of a club.
It will make NO difference to any AdComm if you started an activity in sophomore year vs freshman year; were involved for 3 years vs 4. Really. Their decision to admit or not will not rest on that very minor detail in your application.
