Looking for recommendations for some new cookware, really just 1 pan. I have 2 cast iron plus a couple of Dutch ovens but would like a non stick which up until now have avoided. Thinking of a 12 inch skillet. Have looked at Green Pan and Made In. Too much to think about! Recommendations? Thx!
I’m happy with my HexClad and ScanPan non-sticks. Not cheap but they serve us well.
I have a set of the Green Pan skillets - 3 but without lids. It was a Costco bundle so maybe a production just for them and maybe not as fru-fru as their other pans? I don’t know about that, BUT I have had mine for a year and use them often and they look like new. Did not break the bank.
I love my Caraway cookware.
Swiss Diamond or ScanPan is worthy of the investment. I would avoid Green Pan with its silicone coating. Silicone is excellent for bakeware, like silicone mats, but it’s not great for Cookware because the temperature is too high for the coating. People love Green Pan in the beginning but complain it loses its release quality over time
Scanpan has several lines. Their HaptIQ one is the best of the best imo. This is my favorite of them all!

This is the one I’ve been using for over 4 years now.
I also have this pan in the 10" and 8" sizes.
I like zwilling pans, they last me a few years, I think I discovered them on Chopped kitchen (watching the show, not cooking).
I recently got an induction cooktop so I had to replace my old cookware. After reading recommendations including NYT Wirecutter, I got a Tramontina set from Costco (currently $199 but periodically goes on sale for $159): https://www.costco.com/tramontina-12-piece-tri-ply-clad-stainless-steel-cookware-set.product.100809273.html. If you care about having glass lids, you might shop for a different set. I also have a cast iron skillet that I’ve had for years, and I supplemented the stainless steel set with a large Tramontina SS non-stick skillet. I have to admit that I use the cast iron and the non-stick more than I use the 2 saute pans that came with the set.
I really like my All Clad D5 cookware, but I just looked it up, and the nonstick 12 inch skillet is over $250 - ouch.
Thank you all for the recommendations. Much appreciated!
Agree with poster above about Tramontina non-stick fry pan. I use the heavy Le Creuset 13" cast iron skillet for most uses, but sometimes I need the lighter weight of the non-stick pan.
Tramontina sells it in 8", 10" and 12".
Love my All Clad stainless that I bought 27 years ago, but I am not sure what the current All Clad name is for the same product today.
Take a look at the All-Clad HA1. They are designed to be non-stick unlike the D5 non-stick which are standard D5s with coatings. We just picked up a two-piece set consisting of a 10" and a 12" skillet for $79.
Where did you purchase? No lids?
Also want to recommend Scanpan. Have had several fry pans (8, 9.5, 12 inch) for over 10 years now and they survived abuse (like multiple dishwasher cycles per week, metal spatulas and spoons) without losing their non-stick qualities.
I have their Classic line (most basic) and I will be buying one of their induction-friendly lines when I upgrade my cooktop.
We replaced our gas stove with an induction stove and bought new induction-friendly Scanpans. They’re just as good as the non-induction. I gave my D my non-induction pans and she was able to get two of them replaced under warranty from Scanpan. You have to send in photos and get authorization.
Another option is to look for a Professional Non-Stick from a restaurant supplier. The premium coating is Excaliber, which advertises that it is safe for metal utensils. Places like Webrestaurant or Katom sell to the consumer. Generally, they are better quality for the money, but they are kind of clunky and industrial-looking. For the home, ScanPan is great!
I have a Greenpan ceramic nonstick that I like pretty well. It does require a lower heat in the instructions. I like that ceramic nonstick has fewer dangerous chemicals—no PFAS.
The nonstick seems to weirdly come and go but overall is great. I’ve had it for a quite a while and not a single scratch.
I have a larger Tramontia ceramic nonstick from Costco that I don’t use as often, mostly because of its large size. I don’t like it quite as well as the GreenPan
A finally broke down and bought the D5 All Clad from Costco. We’d gone thru several iterations of increasingly ‘better’ cookware over our 35 year marriage. But I kept seeing the All Clad my sister has been using for 30 years and the pieces my DD now has had for 6 and how they performed…My only thought ‘dang…why did I wait so long’.
That said, I have a Calphalon set of three non stick pans. The larger ones don’t get much use - probably less than 10X a year. The small one which H used every day to make his morning egg just didn’t hold up to that level of use. I’ve gone back to replacing H favorite sized non-stick pan about once a year. Grab one from TJ Maxx or Marshalls.
My small cast iron pan - which I use for MY morning egg is as non-stick as H’s. I find myself using cast iron more and more. They are indestructible…well…as long as I don’t let H ‘scrub them really really clean’.
I have a regular All Clad stainless frying pan…larger size…that I use all the time. It is the easiest thing to clean! And if something does stick, I just use Barkeepers Friend and it’s spotless.
