I want to be an Environmental Engineer and maybe a Weapons Engineer also, would I need an engineering degree or would physics+chemistry be enough?
If you want to be an engineer you would need an engineering degree. Take a look at some job ads in environmental engineering - almost all of them ask you to have an engineering degree (usually environmental or civil, but not always).
