Do colleges like it better if you take the SAT more than once? Do they like to see some kind of improvement or could you just take the test once in the beginning of your senior year?

Colleges like it if you have high scores, basically. If that means taking it once and doing great on it, then you shouldn’t bother taking it again. But it’s totally normal to take the SATs as many as 3 times (some people take it more, but I think that might start to look kind of strange), and if you have improvements then that’s great.
A lot of schools take score choice anyway, so there’s no reason to wait until the last minute (aka fall of senior year) because if you aren’t happy with your score and want to improve, you wouldn’t have much time to do it then before apps were due.
