Do colleges typically review course syllabus/class description or just the general information?

I may take a Perspectives course which is about nutrition. It looks very easy and simplistic if you read the course description and/or syllabus. I was wondering if colleges review this specific information when reviewing your past courses taken or if they just see that I took a Perspectives class, class number etc…without seeing any more information. I want to take a harder class if they do review more info.

It will become relevant if the course needs to be transferred for subject credit at the school you transfer to.
