I’m taking this ridiculously easy course… intro to math sciences and I feel pretty guilty that its so easy. I’ll end up taking more defined courses in other semesters and they’ll be tougher, but I’m curious as to whether or not a class like this will be detrimental on my transcript. I could stay in it and its literally a guaranteed 100.

Guaranteed A+ means it is good for your transcript, not bad. Take as many guaranteed A+'s as you can. Schools can’t gauge what classes are hard and easy at so many different universities.

Doesn’t matter. I did both math and physics for football players and I did fine in law school admissions.

What if I’m trying to get into ivies?

Your GPA matters. What classes contributed to the GPA doesn’t.

So what? What in particular about an Ivy League law school makes it such that an easier math course will be counted against you?
