Do I have a chance for these schools? If not, can anyone recommend some other colleges for me to loo

With this brief profile, do you think I have a shot for Stanford or an IV league level college? If not, could anyone suggest some other colleges for me to look into?
Major: Mechanical Engineering, Psychology, or undeclared. Not sure what I want to study, but I definitely don’t want to indicate something on my application that would hurt my chances (esp. for engineering because of my lack of STEM ECs)
SAT: 1520 (comp), 800 (Math), 720 Reading, 24/24 essay.
SAT 2: Waiting on Physics and Math 2. Expecting at least a 780 for both.
UWGPA: 4.0 (school doesn’t calculate or weigh GPA) Would be around a 4.4 excluding freshman year.
Current Courses: AP Calc BC, AP Physics C, AP US Gov, AP Japanese, British literature
ECs: 1st in state Japanese language and culture competition, 3rd in National Japanese competition (was team captain for both). Summer camp counselor for visually impaired children, math tutor for blind elementary school kid and sighted high school peers, officer positions in Christian, Japanese National Honor Society, and LEO Club, and a few more other commitments.
Other details: Asian, Male, First gen student to American college, blind.

Yes, you have a shot just apply to a few other schools besides Stanford and Ivies to be safe. No one is a sure thing at Stanford, Harvard etc.
