I’m not that confident I’ll pass the AP Calc A/B this year, because of my heavy workload in other classes and also ECs. I certainly don’t want a 2, because that could ruin my chances for UCLA.

What if I start work this summer, plan well, and take the AP Calc A/B test next year along with AP Stats? So long as I submit a 3 or better in my college apps next year (I’m a sophomore right now), does it matter that I didn’t take the test for AP Calc this year?

I don’t think it matters. As long as you get the score on your application. It would be really bad to get a 2 so it would even be better not to take the exam at all. You can however take the exam this year and try your best and then retake it this year. I called the college board and they assured me that the college would only receive my best score.

For the Ivies and most other colleges, AP test reporting is actually done without an “official score report.” If UCLA’s policy is the same, if I were you, I would take the test this year. If it turns out bad, take the exam again next year, and put that score on your application.
