Don't take non-English R&C courses!

If you’re applying to a professional or graduate program that has English Composition as one of their prerequisites, it’s safest to take English R1A-B. Some programs don’t accept classes that do not come from the English department. I’m applying to pharmacy school and some out-of-state schools are not accepting S,SEASN R5A as an “English” class. Of course, I wasn’t pre-pharm at the time I was taking the class.

You should have saved your syllabus after taking the class. The syllabus will help clear everything up in case a school you are applying to is questioning the relevance of the course.

Does the syllabus help that much? I showed them the course description from catalog.berkeley.edu. Maybe I should show them the website where it discusses the Reading and Composition requirement and lists S,SEASN R5A as one of the classes.
