Dual-enrollment, IB/AP advice?

I’m a junior in high school in and this is the first year my school is offering the IB program. As you can imagine, they don’t have a wide variety of classes to choose from. The only math class they offer is IB math studies. I’ve been in the program for a week and I really like it, but I’m worried that, since I’m aiming for pre-med, colleges will think I just chose the easy path. Would it be a good idea to take a dual-enrollment class for calculus at my local community college so that universities see that I challenged myself?
Also, my first language is Spanish, but the IB program at my school only offers spanish HL as language B(non-native). Will that also look like I’m trying to get easy points/credits? Should I just get out of IB and take AP classes instead?
Any advice will be greatly appreciated.
