I’m really dubious about Stanford, and am targetting Georgia Tech. If I get into GT early I’d be more than happy. Here are my stats:

You are very likely to be admitted to GT, I would call it a match. You are at the 75th percentile for ACT, have a nearly perfect GPA and excellent EC’s. Stanford is a reach for everyone, but your would need to improve ACT a bit more for a higher (but still small) chance.
Make sure to apply to GT EA, the deadline is 10/15. You should have already reported your test scores, it not do so ASAP.
If you’re more than happy getting into GT, then apply GT early as I can definitely see you getting in.
Stanford REA is just a complete crapshoot. Maybe the most competitive applicant pool of any early pool.
Better to have an acceptance at hand before Winter Break for assurance before you apply to the lottery that is Stanford admissions (at least it certainly feels like one).
You could, but keep in mind that Stanford rejects a lot of early applicants, so there’s a high chance (90% of applicants did not get accepted, probably high 80% rejected) that your winter break could start with a rejection which is never good.
Having an acceptance that early is always nice to have which is why I think that Georgia Tech is the better option, especially since you like the school so much.
@Falcon1 I am applying to both early now. Also I forgot to state I’m probably going into CS, so I don’t know if that gives a different perspective on the EC’s @rdeng2614 My friend says most people get deferred, is that what you mean by reject? Or do you mean flatout reject?
