Easter Appetizers

<p>I figure I’ll get the best…and easiest…info here. We are bringing the appetizers for Easter…about 15 people. I would love some easy and good suggestions. They will be traveling in the car so something that travels well would be good… and probably things that do not need to be served hot.</p>

<p>I was thinking I’d go to the olive bar at the store…</p>

<p>Need other ideas (besides cheese and crackers)</p>

<p>Deviled eggs would be appropriate.</p>

<p>Scotch eggs are nice, too. You could bring the fixings for bruschetta in little tupperwares and then put them out with sliced bread and a small bottle of olive oil for drizzling.</p>

<p>A family favorite, that travels well and can be made a day ahead:
Greek Spinach Triangles </p>

<p>I made a nice deviled egg recipe last summer. It was basically the usual ingredients but a can of crabmeat was worked into the stuffing. Delicious.</p>

<p>I haven’t tried these, but considered making them for my brunch until I decided to use asparagus in my main dish. They look yummy.</p>

<p>Asparagus Ham Roll-Ups Recipe</p>

<pre><code> 16 fresh asparagus spears, trimmed
1 medium sweet red pepper, cut into 16 strips
8 ounces Havarti cheese, cut into 16 strips
8 thin slices deli ham or prosciutto, cut in half lengthwise
16 whole chives

<p>Instructions</p>

<pre><code> In a large skillet, bring 1 in. of water to a boil. Add asparagus; cover and cook for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry.
Place an asparagus spear, red pepper strip and cheese strip on each slice of ham. Roll up tightly; tie with a chive. Refrigerate until serving. Yield: 16 servings.

<p>This is absolutely delicious with water crackers or bread. </p>

<p>Date Raisin Chutney
½ c. apple cider vinegar
¼ agave
1 cup pitted dates
1 cup raisins
1 ½ piece of fresh ginger, minced
½ tsp. ground cumin</p>

<p>Place all ingredients with 1 1/2 cups of water in a saucepan. Bring to a boil, reduce hear and simmer, covered, stirring frequently until the mixture is reduced and thickened - about an hour. </p>

<p>Will keep in refrigerator for up to two weeks. </p>

<p>This also tastes wonderful served warm with rice.</p>

<p>My party spread is a block of cream cheese, a brick of smoked salmon, and chopped chives or chopped scallions, as well as black pepper and lemon juice, with a hint of tabasco. Mash it all together, and serve with crackers.</p>

<p>Thumper - looks like you could make various spreads and bread and crackers. Who needs dinner?</p>

<p>You guys are great. Dinner is at someone ELSE’S house…or we would likely ditch the dinner. </p>

<p>Our Christmas Eve “dinner” for the past several years has been a buffet of appetizers.</p>
