Easter brunch ideas needed!

<p>oops, I can’t change the title - I mean “lunch” not brunch.</p>

<p>First of all, I’m not a great cook. We decided to stay home for easter weekend this year and I’d like to prepare a late lunch. It’s going to be sunny and beautiful here and I may do something in our backyard. Any ideas for grilling? or easy oven cooked entrees? We aren’t really into ham.</p>

<p>We are having our “traditional” Easter “linner” - between lunch and dinner. The usual stuff our family./extended family usually has. My D who is a college junior told me this morning that when she has a home and we come for Easter she’s making Mexican - know what? I’d take that ANYDAY over what we ARE having!</p>

<p>Moral of the story : make something that your family all love - maybe something you don’t have real often - you’ll know what you are doing and everyone will be excited to eat it!</p>

<p>(the one meal I don’t like to mess with tradition is Thanksgiving - after that, it’s all open to changes to me!!!) :)</p>

<p>Agree with abasket. If it was us, I would do some grilled halibut (small pieces…it’s pricey!), grilled asparagus and roasted potatoes and serve it outside. Add a salad perhaps. Fresh rolls. Some yummy fruit with whipped cream for dessert. And maybe some lemon squares. Tulips on the table. Jelly beans in a big bowl. Have fun!</p>

<p>We usually have a turkey since we’re usually in the mood for it again by Easter. We don’t eat ham. We’ve also just barbecued before but then it’s almost always nice weather here so we do that anytime so it’s not that special.</p>

<p>toneranger, this is what we will be having: grilled halibut, grilled asparagus, and roasted potatoes :slight_smile: And a salad for sure! For dessert, I think we will stick to something simple as well. Ice cream? Cherries jubilee sounds really good.</p>

<p>BB…I do a brunch for the family…colored eggs, ham, easter bread, fruit, muffins and other dishes that are traditional (but not exactly healthy!).
H and I will then be alone for din din…I will make a field trip to Wegmans and looks like we’re have the same dinner!</p>

<p>Ok, we’re having grilled fish tacos. DH will have to go to the fish market to choose the fish. Halibut sounds good! A tossed chopped salad that my D will make. And I also found strawberries for strawberry shortcake and I’m making the oh-so-bad-for-you potato salad with lots of hard boiled eggs. I love it but can’t eat it too often! Thanks for the ideas! <p>It is only three of this year so we are having a small piece of prime rib , basked stuffed potatoes ( usually for Christmas ,but my they are my daughter’s favorite ) and roasted asparagus …maybe some roasted brussel sprouts with pancetta…kind of winter food , but we are in the mood. And I am making a key lime pie for dessert.</p>

<p>I am not a huge fam of ham and daughter doesn’t eat it at all…I would prefer lamb , but I am the only one who really likes it
If I were doing brunch , I would roast a few different veggie dishes…maybe make some pizzettes too…and some deviled eggs</p>
