@“Cardinal Fang” I’m not sure if there is a real recipe or if he just makes it the way my grandmother always made it. I’m pretty sure he just rubs liberal amount of good olive oil on top, then slathers it with garlic and rosemary, then seasons with some salt and pepper. Potatoes - cuts them up into bite size pieces then same thing, tosses with olive oil, garlic, rosemary salt and pepper and roasts in the oven, stirring occasionally so that they get crispy on all sides.
Finally talked to my dad…they are hosting and once again, we are having Sicilian lamb. Tradition, I guess. I’ve been tasked with bringing an appetizer but not sure what I’m bringing yet.
We will go to Sis-in-laws for Easter brunch, and I will bring my homemade 4 layer carrot cake, with cream cheese frosting for dessert. We also bring a lot of Orange Juice since SIL never has drinks. She makes the worst breakfast food, cold scrambled eggs, overcooked bacon, but my other Sis-IL brings a terrific Shrimp-Caesar salad and a fresh fruit salad, so between that at the cake we are set.
We have a smaller turnout since a couple of nieces and my D will not be able to join us as they are away at school.
I’m the potato girl for our Easter dinner…or something like that. I’ve taken potato kugel, and regular noodle kugel. This year, I’m making roasted red potatoes with lemon, chives and basil. It should be good!
Grabbed a Costco seasoned rack of pork- never made before but encouraging comments online- if anyone has experience with this item I’m all ears

Phillips has great signature crab cakes. You get them at Costco. but we always have them as appetizers before the turkey on Thanksgiving, not Easter. Oh crabcakes, we’ll just need to wait 8 more months for you.
