Easter Dinner Ideas - New Recipes or Old Favorites

Easter is my family holiday to host. We will have about 10-12 we are hosting. We have LOTS of standard foods that always are on the table. My family does bring dishes which is greatly appreciated but also it is usually the. same. thing. I do like trying something new!

Here are two recipes I’m thinking of trying out - one for an appetizer and one for the main meal.

Our main dishes are turkey and sausage and kraut. Odd combinations? My mom does the turkey and my SIL the kraut/sausage.

What is a highlight dish on your table???

We are going to have honey baked ham, scalloped potatoes, homeade mac and cheese, broccoli salad (the kind with slaw dressing), deviled eggs. Pretty standard fare.

Your beet hummus made me think of an appetizer that is really tasty, you take sliced canned beets and drain them, then put a dollop of regular hummus on each slice (fresh is best), drizzle them with balsamic vinegar and sprinkle with oregano. Sooooo yummy!

For years I’ve done rack of lamb because it’s my youngest son’s favorite. He’s not here this year , so I might do something simpler. I can’t believe it’s next week.

I think we’re ordering out for lobster rolls. But my sister and I will make the age old family recipe Polish Cheesecake which takes 3 lbs of cream cheese, 6 eggs and 2 cups of heavy cream.

Lantana makes a very good beet hummus although I’m sure it would taste excellent made from scratch.

We’re a family of foodies but our menu remains fairly static from year to year. We tend to go traditional for the holidays to please everybody. If it was up to me, we’d have lamb but one extended family member isn’t a lamb fan so we always have ham.

I’m going with lasagna and meatballs – in my family that is always the winning ticket for a holiday meal.

My parents usually host and my Italian father typically makes Sicilian lamb and potatoes and some combination of roasted vegetables. My mom makes dessert. We usually bring appetizers.

Oddly, we have not discussed Easter dinner yet. I think my mom is getting tired of hosting our big family gatherings, even though my father loves to do all the cooking. We never ever have ham,but I may suggest ordering one this year and then I have a great scalloped gruyere potatoes recipe that would go well with it. I’ll offer to host but I don’t even know what my brother’s plans are. He and his family usually come, but they may have other plans.

Easter came quickly for me this year so I hadn’t really given much thought about it yet. Looks like I need to give my mom a call tomorrow to see if she plans to host or wants me to.

Sicilian lamb and potatoes? Recipe please.

I’m planning an Easter Brunch.

The menu is still Very uncertain. I have exams to grade tomorrow, then report cards due. THEN, on Wednesday, I’ll figure out the menu.

As of now: Honey Baked Ham, Mashed potatoes.
My sister is bringing a french toast casserole, so I won’t make mine.
Sausage, bacon.

Probably a quiche

Deviled eggs.

Not sure what else. I’ll figure it out Wednesday.

Don’t forget all the springtime vegetables!!! I love fresh asparagus done many ways, a bright green salad to contrast the heavier casseroles/potatoes.

My niece also always makes hot cross buns.

Thinking of Potatoes Dauphinoise or Potatoes Anna this year but the family will likely disagree and want mashed potatoes. Definitely making Bourbon Glazed Carrots.

My sister wouldn’t let me forget mimosas even if I wanted to. She’s bringing the fixin’s.

A friend just made me steamed asparagus with fresh pesto on it. I wasn’t sure if I think they went together but it was quite delicious.

Easter is the one holiday I don’t host. I don’t even care what is served, I’m just glad to be a guest.

My contribution is to bring up crab cakes from a favorite restaurant for dinner the night before.

My SisIL is hostessing Easter brunch. I’m bringing fruits. So far, have bought yummy red cara cara oranges from Costco. Still deciding what else to bring with the oranges. Maybe a pineapple, some strawberries and blueberries. Maybe some half-defrosted mix berries and some plain Greek yogurt.

Yes, the puppy @eyemamomhas is adorable but I can’t bring that!

Coffee, Tea, OJ, Mimosas, beer, wine, soda, cranberry juice

I still want to find a quiche or two, and maybe a lemon meringue or Keylime pie…
Maybe bacon, egg & Cheese sandwiches; my daughter found a recipe that involves baking frozen bread in a bundt pan, splitting it, putting in the filling then replacing the top. It sounds easy enough, though I don’t have a bundt pan or anything like it.

What am I missing?

That…is a list! An awful lot for 11 people - more dishes than people!! Does everyone bring Tupperware for leftovers?

That said, I would be missing a green salad of some sort. Something cool and fresh. Fruit to me in this list is another sweet. I’d want a green salad. Even like a greens/strawberry/pecan salad or something.
