What are our favorite Easter Lunch recipes? I think I want to have an Italian inspired menu this year and looking for ideas.
There are Italian easter pies both sweet such as a sweet ricotta pie or savory like a torta rustica.
This is a great recipe I make frequently and its easy. It’s great served with polenta, roasted asparagus and/or baby peas with some butter, lemon juice and zest, julienned prosciutto, s&p.

What does one serve with a torta rustica? Salad, soup, antipasti?
@doschicos, that sounds delicious! Where it says to “mix” the garlic and rosemary, do you mince them finely together with a chef’s knife, process them together, or what? (I figure that the original might be mortar and pestle…)
@Consolation I just do a fine mince with a chef’s knife. I’ve used the same treatment with a variety of less fancy pork roasts, both boneless and bone-in. The garlic and rosemary combo with the pork is yummy and takes me back mentally to Tuscany. A good alternative to polenta is tuscan style roasted potatoes.
@chinablue I think any of your ideas would be great. I could see a generous antipasti board to graze on to start followed by the torta and an arugula salad.
I like to do a big variety of antipasti on a huge butcher block or a make your own bruschetta board when entertaining a group.
I love polenta!
Me, too, @Consolation, preferably soft and with cheese added. I’m a huge fan of its American cousin grits as well.

That recipe sounds really good doschicos …but then I remembered my only child that will be home isn’t a fan of pork. Maybe I will try it a few days later when my mother and two sisters come for a visit !
