<p>I may try the tofu recipe with egg whites rather than tofu. I like tofu…have had it made by others and in restuarants all kinds of different ways and it’s been very good…but I have NEVER been able to make anything myself that tasted decent with tofu!</p>
<p>I don’t know what the “diet issues” might be, but I often make egg salad using the yolks from only half of the eggs–no one seems to notice the difference, and it’s much lighter fare. But I think you’d have a real blandness issue using only whites–it would also look odd, no?</p>
<p>Curry powder (which is yummy even in whole-egg salad) takes care of both flavor and color issues.</p>
<p>If you don’t like curry, then use your favorite mustard, and don’t be shy with it. Think deviled egg.</p>
<p>My local Trader Joe’s has an egg-white salad (sold prepared) that is great, but it comes only in small containers so it would be quite expensive to get for a crowd. Do you have a Whole Foods or similar store? Often they have already-prepared egg-white salads.</p>
<p>Yes, I actually only use one yolk to 6 egg whites, curry powder, salt-free Spike, fresh ground pepper, and scallion (or chives if I can find them fresh), finely minced. I use a mixture of 1/2 & 1/2 whole mayo and plain non-fat yogurt. Not one person has ever figured out the lower calories and everyone raves about it. I serve it with hearty crackers, a personal favorite is multi-grain rye crisp.</p>

<p>I think you mean “TO hearty crackers.” With a title like “Egg White Salad,” I knew it was only a matter of time before somebody served up a big steaming bowl of Race Card.</p>
<p>Schmaltz, Your post is very strange, not sure what you are trying to get at. “Crackers” are of course , a slang for white people. What does your post have to do with egg white salad? Just curious. What does this have to do with your “Race Card” assertion?</p>
<p>And now back to the recipe portion of our program…I have had the vegan one with tofu.
For me it is just okay. Can you make it with half the yolks? If you have to use whites only definitely add curry powder or something else to give it more flavor…</p>
<p>Thanks to the op I made some of this yesterday. 4 eggs with only 1 yolk, low fat mayo, Greek yogurt and Dijon. It was delicious and it’s on the menu for lunch today.</p>
