I was wondering what sort of electives or minor program would be most useful with an Economics/Sociology double major.

Well, it depends somewhat on your interests and what you plan to do. A lot of fields could complement your majors. By “useful” do you mean this in terms of employability?

Think in terms of clusters of courses (which may be drawn from several different depts/schools, rather than a formal minor in a single dept. Some here are some clusters (availability may depend on what type of school you attend):

Quantitative Skills (math, statistics, computing, methodology, e.g., survey research)
Business (a general core in the major business subfields or marketing or consumer finance or human resources)
Communications (writing, digital media, pr, political communication, campaigns/elections, etc.)
Geographic Information Systems (GIS)—increasingly has applications in social sciences, etc.
Public Policy/Public Administration (incl. Finance)/Nonprofits/Urban Affairs/Planning

There are probably many more combinations/clusters you could come up with, particularly if you plan on grad school or professional school.
