My daughter wants to major in linguistics. But that does not seem very employable. What would be a good, ultra-employable double major for her to go after?

It depends. What are her interest? What are her strengths? Your question is too broad to answer satisfactorily.

She’s really great at math, but does not like it very much. She likes language, culture, etc.

“Ultra” employable doesn’t really exist in today’s economy, but most people agree that Nursing, Computer Science, and Accounting are reliable degrees to land most graduates a good paying job fast. However, from the little bit of information you gave us it doesn’t sound like she would be too interested in those. She might be better off enrolling in college as “undeclared” and taking a variety of courses to see where her interests are. Maybe pursue Speech/Language Pathology, which would require a graduate (masters) degree? I know a few people who went for that and found jobs as Speech Therapists fairly quickly.

the programming aspect of computer science is very close to linguistics, and some computer science degrees even offer a concentration in computational linguistics. if she’s good at math, that might be a viable path for her to pursue.

that said, whether or not she will be an employable linguistics major depends on the caliber of her school, programme, professors/advisors, and whether she interviews and networks well.

I will look over these options with her. Thanks.
