Fast and inexpensive casseroles

<p>I do not have a lot of recipes for casseroles. What are your favorites?
Have a craving for some potatoes and cheeses tonight. What else can I add?</p>

<p>You could make a frittata with those and add something green. Slightly under boil potatoes, add grated cheese and a vegetable, scramble 6 eggs and bake or cook in skillet. 4 generous portions.</p>

<p>My husband will drive to whereever your house is if you serve this:</p>

<p>Augratin Potatoes and Ham</p>

<p>In a deep casserole dish add:
3-4 potatoes, sliced thin w/skins on
2T. diced onion
1 cup. cubed ham
1 c. shredded sharp cheddar cheese
Salt and pepper</p>

<p>Repeat.</p>

<p>Take 1 can of cream of mushroom soup and mix with 3/4 soup can of milk. Pour over mixture in casserole dish. Cover and bake for 1 1/2 to 2 hours at 375. </p>

<p>My kids who don’t like ham, like the potatoes. And my husband who loves ham gets theirs. :)</p>

<p>My recipe:<br>
Diced potato - boil about 10 minute, drain and saute in butter/olive oil.
Add diced onion and diced green pepper, continue to saute.
Add sliced or diced sausage or ham.
Season with salt, pepper, paprika.
Towards the end add diced tomato, a heavy dose of Louisiana hot sauce and grated cheese.
Serve with overeasy eggs.</p>

<p>The recipe can be varied somewhat, but Louisiana hot sauce is a necessity. Don’t try to substitute Tabasco.</p>

<p>I just love Tuna Noodle Casserole. I also love adding different items to tweak it. Last week I left out the tuna and added some leftover turkey, dried porcini mushrooms (pre soaked) and peas.
It was great!
Since I have to visit my sisters for Thanksgiving (NOT a good cook) I have been “pre-gaming” Turkey day and made my second bird this weekend (they are SO cheap). I will be making a huge Turkey Pot Pie tomorrow. I make it out of leftover gravy, root veggies, celery and onions. Add poultry herbs to the crust. (ALMOST a casserole)</p>

<p>Easy one…</p>

<p>1 pound of ziti or some other pasta…cooked and drained.
I jar of your favorite pasta sauce
1 1/2 cups mozzarella cheese
2 cups of cottage cheese.</p>

<p>Mix the pasta and sauce. Add the two cheeses and cook. Bake for 30 minutes at 350 degrees or until cheese is melted.</p>

<p>Sometimes we add other veggies to this as well…sauteed eggplant and peppers and onions.</p>

<p>anything you make in the crockpot or pressure cooker will taste like you cooked it for hours. I know you asked about casseroles, but I needed an excuse to post this.</p>

<p>Jewish Chicken noodle soup (my bf said this has medicinal properties!)
cut up onion, carrots and celery
place in bottom of pressure cooker
Place metal steaming rack above the vegetables.<br>
Place chicken on this rack. Add seasonings and a couple of chicken bullion cubes.
I used 4 large split chicken breasts and had tons of extra chicken for other use besides soup.
Add water to fill pot to 1 inch below rim.
Bring up to pressure and let cook for 25 minutes. Remove from heat
Allow pressure to drop naturally
Open and take chicken off steam rack (you prevent bones from falling thru and mingling with vegetables. Remove chicken from bones.</p>

<p>Cook noodles separately</p>

<p>I can have this entire process, from first chop to putting stuff in frig, done in <3 hours (it takes about an hour for pressure to release naturally)</p>

<p>Depending on how fatty the chicken was, you may have a small layer of fat to skim off the top once everything is cooled and congealed.</p>

<p>Our favorite on a cold night: in a casserole dish ( I use a 2 qt one) put browned hamburger or turkey, then green beans, 2 cans of a creamed soup (celery, mushroom or chicken-I use low fat) and top with mashed potatoes. 350 for about 40 min- until top is browned. We call it Shepherd’s pie, but I don’t know if it really is that.</p>

<p>Here’s a cheap and unhealthy casserole… </p>

<p>1 bag tater tots
1 can cheese soup
real bacon bits
shredded cheddar
hamburger meat
onion</p>

<p>Saute hamburger meat with chopped onion. Mix in cheese soup mixed with amount of water stated on can.
Bake tater tots for amount of time stated on bag. Place tater tots in bottom of baking pan. Pour meat/soup/onion mixture on top of tots.
Sprinkle bacon and shredded cheese to taste on top. Bake at 350 until cheese starts to look bubbly and golden.</p>

<p>The cheese soup makes the difference. Maybe I’m crazy, but I think it gives the casserole a better flavor than cream-of whatever.</p>

<p>^physicsmom…you win. That has to be the most decadent wonderful example of cheap cuisine ever.</p>

<p>Yikes! These recipes scare me. My husband suffered cardiac arrest last year and we’ve been eating scrupulously healthy ever since. I guess this isn’t the thread for me!</p>

<p>This thread, and many food threads on CC, make me want to invest in Campbells.</p>

<p>The recipe that I suggest isn’t too bad if you take out the butter (or restrict it). There’s lots of spinach, some Parm cheese, yogurt, potatoes and spices.</p>

<p>My father hated casseroles, he thought they looked like a pile of trash on the plate and he called them all Trashman instead of casserole. So we grew with Italian Trashman, California Trashman, etc.</p>

<p>But he loved this one:</p>

<p>Mexican Trashman</p>

<p>Can of tamales
Can of Chili
Can of Kidney beans
grated cheese
1 bag Fritos</p>

<p>Smash up some Fritos and put them on the bottom of the casserole. Layer on half the tamales, chili, kidney beans and cheese. Add second layer of Fritos and then the rest of the tamales, chili, etc. End with a layer of Fritos and cheese. Bake covered at 350 until hot and bubbly. Take the lid off for the last ten minutes or so to crunch up the top.</p>

<p>My mother always made this with canned stuff, but I make it with tamales from the hispanic bakery, homemade chili and black beans. I tried using tortilla chips, but you really need the Fritos for this one.</p>

<p>We know a family of 13 who could feed the family with one pound of hamburger by cooking a 9X13 dish of Shepherd’s Pie. It can be made pretty quickly by using potato flakes for the mashed potatoes.</p>

<p>I do a version of Shepherd’s pie as a 2nd night dinner. First night: cook a turkey breast, mashed potatoes, etc. Second night: put the leftover turkey meat in the bottom of a large, glass pie dish. Add thawed frozen mixed vegetables (Trader Joe’s carries a wonderful one called Organic Foursome). Pour turkey gravy over all (TJ has a good one in a box), cover with mashed potatoes, bake at 350 until heated through.</p>

<p>This thread reminds me of my sisters MIL, who didn’t have cornflakes for a casserole topping, so she used Raisin Bran.</p>

<p>TATER TOT CASSEROLE
2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large cass. dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
Makes 2- 9”X13” pans</p>

<p>I just heard this weekend about a restaurant in Maine that makes a Turkey Pot Pie with a stuffing crust…instead of pastry… so, keep it in mind next week if you have leftovers. Sounds delish, yes? I have made a quiche with a crust of hash browns… big hit at a bridal shower…so, stuffing crust could be a big hit too…</p>
