Food Truck Inspired Recipes

Probably illegal that I am posting on the Weight Loss for Dummies thread and then start this thread. :)

D went to a Food Truck event this past weekend. I received pictures of some of the various food trucks she saw/ate at - hopefully my iPhone is not ruined with the salivation as I viewed her photos.

One of the Food Truck sold french fries and tater tots only - but of course, in creative ways. She bought Loaded Baked Potato Tots - crisp tater tots topped with cheese, bacon bits, green onions, chives and sour cream. YUM. This inspired me to remake some fries I recently bought - crispy crinkle fries topped with diced tomato, onion, jalapeno, feta, pesto and garlic salt - SO good!!! While I realize the fries are not exactly healthy, the rest of it really makes for not a bad meal (and I can definitely make this a meal).

So, just wondering for those of you who are lucky enough to frequent food trucks in your area - share some of the creations you have seen/purchased, any that you may have recreated at home…or, just come up with your personal best french fry/tater tot topper you can imagine! Healthy or unhealthy!!!

I’ve seen tater tots like that on the menu of several chain restaurants, including Hooter’s. It’s a very tasty food combination regardless.

Some family members recently went to a party where the host served Santa Maria tri-tip, which is often classified as street food. They said that it was excellent.

I often go to food trucks serving Mexican food. The tacos served there are most often served Mexican-style on two small corn tortillas with ones choice of pork (very traditional), bottom round steak, chicken breast, beef tripe, or occasionally beef tongue, and then garnished with cilantro and served with a slice of lime and radish, the latter being used to cleanse the palate between tacos. These are relatively simple to make at home provided you use the same cooking style, fresh tortillas being preferred. Of course, you can always buy the big flour tortillas and make huge burritos, which can also taste very good.
