It is only 190 cal per 1/2 cup serving! Since you ate only a teaspoonful, it does not even count, right?

Homemade and fresh. I remember parents driving thru NJ for fresh tomatoes , and eating them on way home. Fresh corn. Picking strawberries or apples. Love fresh markets. Oh yes, we’d drive an hour to a place that made its own ice cream, fruit varieties, pumpkin, etc. the folks had many fruit trees and a large garden. We’d pick our own cucumbers and tomatoes, those little ones.

Mix all ingredients and form into 8 crab cakes

Sometimes I make them bite size and serve as an appetizer / party food

Crab Cakes (adapted from the New Basics cookbook - by the Silver Palate folks)

1 lb fresh lump crab
1 cup cooked corn (I actually do fresh corn on the cob and cut it from the cob to include)
1/2 c each of finely diced onion, green bell pepper, celery
1 c mayo (I use less and it’s a product from The Ojai Cook - Lemonaise)
1/2 tsp dry mustard
cayenne, salt and black pepper to taste

Combine these ingredients then add 1 beaten egg and 1/4 panko (can also use saltine cracker crumbs). Form into eight (8) patties and coat with panko. Chill at least 30 minutes but no more than a few hours.

Heat 1 tbsp olive oil and 1 tbsp butter in a skillet; cook each cake about 3 minutes per side until golden.

They say to serve w/tartar sauce but I just offer more of the Lemonaise and fresh lemon wedges.

Lobster
Home grown tomatoes
Fresh corn
Spinach salad with blue cheese, walnuts, red onion, etc.
Italian Cream Cake

Some of the other things mentioned are sounding really good right now as I’m snowbound, especially the crab cakes!
