My GC told me that I should take foreign language SAT IIs on top of the 3 academic subject tests I’m taking so that I can offer a quantitative way to show my language fluency. Should I really take more? Would I look like I like testing a little too much by taking more subject tests than I have to?

No, you should take it if you can get a good score, it is the best way to show colleges that you are really competent in a subject. They don’t care if you like testing too much, besides no one really likes testing, so they will just see you as determined to show them what you know. I am taking 4 academic subject tests and 2 languages, so 4 total isn’t that bad in comparison.
