This fall I would be going to go to Michigan to study Electrical Engineering. FSAE seemed like a good transition from high school to college since I have participated in robotics in high school and would like another team atmosphere. It does help that the UMich team is said to have a 100% placement rate and that a lot of engineering companies love FSAE alumni due to the skills that are created in a project team environment. However, if I were going to pursue a Masters or PhD, how beneficial would FSAE (or any project-based team) be in admissions since it is more practical than theoretical.

I am sure that it would help because it demonstrates that you have a real interest in the discilpine which they could take as an indicator of future success.
