Ganache question???

<p>I like to try a new holiday baked good or two each season - these look like something my family would happily eat:</p>

<p>I like that I can bake them in my mini muffin cups and get lots of little bite sized treats!</p>

<p>Question: I usually put all baked holiday treats in the freezer after I finish them and then pull out what I need for the family, for a plate to give away - whatever. </p>

<p>Will the ganache survive freezing???</p>

<p>Yes, it will be fine. One concern is condensation when you thaw them; I recommend leaving them uncovered.</p>

<p>So thaw uncovered? Easy enough!</p>

<p>I make a similar but somewhat easier version. Bake one box brownie mix. Cool completely in fridge. Top with frosting made with powdered sugar and creme de menthe liquer. Cool completely. Top with chocolate chips melted with butter in microwave. Cool completely. The trick is to cool completely between layers. I then cut into small bite sizes and freeze any leftovers. They are very rich and definitely freeze very well.</p>
