My teacher and I arranged for me to do a separate writing assignment as my graded writing sample, but she still hasn’t graded it. I’m certain that I can get it in before February, but how will admissions view this?
For schools where the deadline in 2/1, you’re fine. For schools where the deadline is 1/15, the schools expect you to meet the deadline

One of the schools that require a graded sample says 1/15 is a soft deadline, does this apply to graded writing samples too?
Contact the school for clarification. My interpretation of soft deadline means you get your part in by the deadline, but your current school and teachers have a grace period

Thanks! Would it matter if I submit my essays in gateway before the deadline but the school doesn’t receive it until a few days later?
Yes as long as it is submitted on gateway by the deadline it’s fine
Definitely contact the schools. My daughter had to do this last year because her school didn’t do any non-fiction/persuasive essay writing until second semester of 8th grade so she had no graded writing sample. She had to ask her English teacher if she could write an essay and have him grade it/write official comments for her application. She wrote the essay in November, submitted it in December, and it was getting very close to the deadline with no response from her teacher. All the schools that asked for a graded sample said it was no problem and to just get it to them as soon as she could. However, she had to take the initiative to ask directly - just get in touch with the AO you’ve been working with and ask. It will probably be fine once you explain why you need a bit of extra time.
