I love a cake with add-ins - so carrot cake, hummingbird cake…..not the most popular opinion but I’d RATHER have them with a regular vanilla frosting rather than cream cheese - I’ll eat CC but sometimes thing it’s overkill.
A good moist chocolate cake with homemade chocolate frosting is also a winner. Store bought frosting is ok in a pinch but home made is
times better!
A cake I can pass up: Red Velvet
I am gluten and dairy free and also allergic to chocolate. My favorite was white cake with chocolate frosting, next was carrot cake with cream cheese frosting. Now I buy sprinkle cake at WF or cake at any GF bakery. I love cake! I love frosting even more! I eat it with sorbet, mango or raspberry. Miss vanilla ice cream too but it’s all good.
The chocolate chocolate cupcakes I’m making today do not need any kind of frosting…at all!
Last year, we had a surplus of ripe pears, and I made a pear cake. I used an apple cake recipe, and just substituted pears. It was delicious. Just sprinkled it with XXX sugar.
I’m not a big frosting fan, so I always look for cake and cupcake recipes that don’t need frosting.
I love baked goods and will eat pretty much any kind of cake except carrot cake. It just sets my teeth on edge. If it doesn’t have cream cheese frosting it’s edible, but still not my favorite. Chocolate, lemon, coconut, and almond are my favorites. Also love pie. And most cookies. And muffins. I clearly have a baked goods problem, thus rarely have them in the house.
My personal opinion - even if fully moist- that’s called a muffin!
I love frosting and feel if it’s a cupcake or cake, a spreadable topping of some sort makes it even better.
Thanks for starting this thread @abasket ! I knew I could count on you.
My favorite cake is vanilla with vanilla buttercream frosting. For some reason when I was growing up my mom made me angel food cake every year on my birthday even though it was “ meh” to me.
But what I really wanted for my birthday was a fancy decorated cake like my cousins and friends got. I especially wanted one with the Barbie doll where the cake is her skirt. Never happened. Mom said no. Dad always tried to make me feel better by telling me how good homemade cake was…
A few years ago I realized I was never too old to get my fancy cake. Couldn’t find a nearby bakery that made the Barbie cake but ordered a fancy one with a plastic tiara on top! I have started doing it every year.
mmm… cake! My favorite are Pineapple Upside down cake, because pineapple is wonderful on everything except pizza, and Boston Cream Pie. I’m kind of meh on the normal single or double-layer cakes, mostly because of the frosting. I’ve been known to scrape all of that off and just eat the cake. People definitely do not look at me like I’m weird when I do that. ![]()
I make a good carrot cake but our family in general are not cake eaters so it mostly ends up sliced and frozen. A lot of effort! I’ve wanted to take a cake decorating class but not sure who I’d be decorating cakes for.
The best cake I ever tasted was a chocolate zucchini cake. A work friend made it and gave me the recipe- one of these days I’ll make it.
Oh yum, pineapple upside down cake! I forgot about that!!
And I have a wonderfully simple recipe for apple cake – it’s just an 8x8 single layer with lots of peeled apples in it, so it’s very moist.
Oh – tiramisu!! That’s my all-time favorite cake.
I can’t stand the layer cakes with lots of frosting between the layers.
I’ve never gotten red velvet either. After that, any and all cake for me. Angel cake isn’t my fave, but it’ll do in a pinch with whipped cream and fruit.
Favorite homemade probably is Texas Chocolate Sheet Cake (sour cream version, not cinnamon, although that’s good, too). I also love the store-bought Chantilly Berry Cake from Whole Foods. I bought it for my mom in her waning years, and it became her favorite. Carrot, Italian Cream, Hummingbird, Coconut … I love it all.
YES to pineapple upside down cake - that was my dads favorite.
Both my mom
And MIL made this angel food cake recipe often - I think a great summer light dessert and the angel food cake is an ingredient, not the
!
My son’s favorite is Hummingbird which has been mentioned several times here. He introduced me to it about 10 years ago and when he married that’s what he and his wife chose for their wedding cake.
I agree a Texas sheet cake is delicious ( my mom used to make). Fun topic.
The Aunt Bea household has discovered mango cake from a local bakery. It’s delicious and fluffy with lots of whipped cream!!
I will eat most any kind of cake. My favorite is a tie between a chocolate with chocolate frosting or a cheap Walmart white cake with white frosting - NOT whipped frosting.
Black Forest cake always looks much better to me than it tastes. Agree with red velvet. That sounds better than it is.
This is younger S’ cake for his 13tb bday. It’s all he wanted. I found a local woman who made cakes. She had made princess castles before, but not one like D wanted. He was very specific in describing his preferences. We loved how it turned out. It was supposed to feed 150. There were 8 of us lol. I also won’t mention how SLOW I drove that sucker home in my car. She lived out in the county so lots of 2 lane 55 mph roads. I cringed over every pot hole and manhole cover
I’m picky about cakes and cupcakes lol. Got spoiled by the local Euro deli that used to sell amazing cakes and pastries. My favorite cake is a Napoleon, a multi layer cake made from puff pastry and a special creamy filling. When I’m in the mood to make one, which doesn’t happen often
, I use my shortcut recipe like this one by Natasha’s Kitchen (using frozen puff pastry instead of making it myself) ![]()
We aren’t big cake eaters in my household. We joke my husband thinks one big cupcake serves 4. A local cafe used to make a yellow cupcake with a good chocolate frosting. They also made a delicious coconut cake but only two of us like coconut cake.
I don’t mind carrot cake if it doesn’t have pineapple in it. My kids still like a white funfetti cake. We don’t mind a mix with canned frosting. My sister and her kids love to bake scratch cakes but they are a waste for my family. We usually each have a small piece and toss the rest.
Now give us a pan of brownies and we will finish them.
I do agree with another poster that the chantilly cake from Whole Foods is really good.
I love a good chocolate lava cake aka Queen of Sheba cake aka fondant cake (in New Zealand). Some whipped cream on the side and oozing chocolate from the middle..heaven. I’ve also really enjoyed coconut cake with meringue frosting. I admit the frosting/filling is my favorite part of a cake; I do have a sweet tooth.
I agree with @ClassicMom98 that Black Forest seems like a great idea but never really lives up to it. I LOVE cherries - I think I love them best in a pie though!
If I’m making a bday cake for them, my kids still request a yellow cake with chocolate frosting (homemade).
I love cake!
Imho, cake is a vehicle for frosting ![]()
My favorites are white cake with dark chocolate frosting, chocolate with chocolate frosting, hummingbird cake- discovered this a few years ago and have been making for Christmas, and Boston cream pie. I also really love an old fashioned bakery white cake with white frosting. I much prefer layer cakes to sheet cakes.
We hardly have it anymore because it ends up being too much for just the two of us to eat.
My mom used to make a Charlotte Russe for our birthdays, lady fingers layered with chocolate mousse and topped with whipped cream and shaved chocolate, so yummy!
