That sounds very delicious and do-able, Choatiemom! Do you think I could use regular onions instead of shallots? Heh trying to make it easy/familiar to get myself to make it!

I’ve sometimes subbed chopped onions for shallot.

New very imple snack idea, prompted by an excess of pineapple chunks (leftovers from snacks I brought to church). It was surprisingly tasty.

pineapple chunks + dallops of greek nonfat yogurt + shredded coconut

I don’t make any distinction between onions and shallots. You can put anything in this soup.

@Colorado_mom - I do a lot of fruit (usually thawed organic frozen berries) + yogurt or cottage cheese. I add a dollop of whipped cream for sweetness (the kind made with sugar not corn syrup). The whipped cream is not super healthy I assume but it makes a nice dessert for me that keeps me from going for less healthy options! Will try the shredded coconut - that sound like a nice texture + sweetness!

Today’s healthy meal is going to be a tzatziki chickpea salad with whole wheat pita. I was a bit skeptical of honey in the dressing, but it’s very good. I did use a whole lemon. I also salted the cucumbers to pull some of the water off so the salad wouldn’t be watery.

lol just came here to post this - it’s similar to @sabaray salad above but since I have a gift link I’ll share anyway. Higher protein Alternative to potato salad!

I have that one in my recipe box as well. I had all the ingredients for both but decided to use my cucumbers! Glad to hear it’s a winner.

I’m going to try this recipe tonight. Some of the reviews mentioned it got watery. I’m assuming by salting cucumber that helped. How was it as a leftover? Some reviews mentioned not adding the cucumber till serving.

That recipe calls for Persian cucumbers. I bet the folks who had a watery dish used regular long ones. Persian cucumbers are much, much less watery.

I wouldn’t make this without salting the cucumber. I made it Sunday and we’ve both been eating it. It has held up well as a leftover. Today is the first time I’ve noticed “thinness” to the dressing but H will finish it today, I’m sure. I did use a whole lemon instead of the half in the dressing. I used “mini” cukes that are similar to the Persians.

I’ve been having fun using Yuka app to assess various food (scanning barcode at home and the grocery store).

The “perfect breakfast” sounds like what the diabetes educator recommends for me. Most days are an egg and mixed grain toast (26 grams of carb). I’m glad you’re enjoying the app so much!

I still pay the nost attention to the MyNetDiary food score, shown as I log food (these days mostly for nutritional analysism since at weight goal) - What is MyNetDiary's Food Grade and why is it important?

Then often for a new food I’ll look at Yuka. And honestly I’ll pay a little more for a food if it meets my nutrition criteria AND has an Excellent score on Yuka.

Sometimes I’ll also check on the “Bobby Approved” (most restrictive LOL - many of my choices are Not Approved. But it’s interesting to see the reasoning and the suggested alternatives).

Anybody suggestions for using tonic water?

We had an old 2 liter bottle in pantry, and we didn’t want to trust it for tbd future entertaining. I have started drinking a little bit of it, still has fizz. But per the label it has a surprising amount of calories and sugar. (Did not have the excess salt I was expecting, but that is not one of my nutrition concerns.) I don’t love the taste an dmay get rid of the rest of the bottle.
