Yes, sometimes I make blueberry oatmeal bites in the IP with those molds. These freeze well, too. I’m not a breakfast eater, but DH is and guests like these and the egg bites as well.
Finally getting down to the last of the turkey Today for lunch we had turkey sandwiches on leftover little King’s Hawaiian rolls with cranberry sauce. Also some roasted butternut squash soup (a wing it, no recipe project - came out pretty good). Used cubed squash from TJ, quite handy.
I do my butternut squash soup in the instant pot. It’s SO good and easy. I also just have one cup of that left! It’s a good vegetarian meal and uses coconut milk instead of half and half or cream.
Did not use milk or cream. My main goal was to do something with immersion blender, since I just sent one to my son…. wanted a good discussion topic.
Interesting you mention coconut milk. I saw a recipe that included it and assumed that my husband (not a fan of coconut) would veto it. But he did say that it would probably be ok to have coconut milk in soup, something I do like myself in Asian restaurants.
You do not taste “coconut” at all. I also drizzle a little on my soup just before eating.

Have you tried these? My husband (who is normally a cereal person, every single day) and I have had fresh berry pancakes twice lately. This looks like a nice alternative.
I have not tried yet! I thought the apples might provide a little “crunch” that I’d like.

I made the apple oatmeal pancakes this morning- seriously delicious imo! I made half the recipe and grated the apple. My toppings are blueberries, dried cherries and almonds. I top with a Light swirl of maple syrup.
Only one fell apart while cooking - cook medium low and long enough that they cook all the way through

I saw this recipes on TikTok and decided to try it - looks and tastes like a creamsicle! Would be really refreshing in the heat as well.
Freeze clementines slices. The recipe takes probably the slices of 2-3 clementines.
Add the frozen clementines to your drink blender. Add to equal about 3/4 cup any combo of plain yogurt, cottage cheese, vanilla ice cream. I used about 1/4 cup of each. A tsp of honey. Enough milk or water to blend. Blend and enjoy! It’s really good! If you used flavored yogurt you could probably skip the honey.
You don’t notice the “skin” of the clementines at all. Completely smooth.
Sounds yummy, but a carb bomb with the clementines, ice cream, and honey. But, if you skip the honey and the ice cream, I’m sure it wouldn’t be anywhere near as good (and still 18-24g of carbs from the clementines).

I am not worried about carbs especially in fruit and the small amount of honey if used. The idea of a snack like this for me is that I’m getting something delicious and along with it I’m getting a nice dose of calcium and nutrition from the fruit. A little sugar from honey or if a scant 1/4 cup of ice cream is used is not going to break me.
I burn a lot of calories each day averaging 8-9 miles on my Apple Watch daily - those carbs are put right to work.

A lot has to do with portion size and activity. And now I am smiling remember a story from when our son was a hungry, hungry (and quite active) teen. Back in the days when he a few times asked, “Did we have dinner?”… lol, evidently my cooked meals were not very memorable.
He asked, “can I have some ice cream?”. Me - “Have a banana”. He complies. Ten minutes later he asks, “NOW can I have some ice cream”. Me - “OK”, thinking…. I suppose a banana and a bowl of ice cream is better than two bowls of ice cream.
I am very carb aware (not keto). It’s how I keep my girlish figure without doing anything strenuous. ![]()

For those with a goal of cutting carbs (for weight loss and/or lowering A1C)… any tips?
CABBAGE: I’ll share that a diabetic friend recently mentioned that she uses a lot of cabbage. In fact, she makes a lasagna-like dish with steamed/wilted cabbage instead of lasagna noodles. That inspired me last week to try make a non-layered “wing it” casserole with cabbage, ricotta, mozz, sauce - it was quite good. This week I made a beef/veggie stew (no potatoes) and served it on steamed cabbage. (We used bowls, as the stew was soup-like.). Turns out the my husband and I both like cabbage, just didn’t have it in our cooking rotation very much (other than with corned beef) since the kids never liked it.
I love cabbage. I will say that too much cabbage can = many trips to the bathroom.
Agree with @abasket - I like cabbage, but can’t eat it many times in a row or too much of it.
