Help! I've been rejected from Dual Enrollment, what now?

//before u read im aware i sound super jaded in this, i just really want a shot at my dream schools. sorry in advance

I took AP Physics C and Calc BC in junior year. I planned to do Dual Enrollment with the nearby college, but I got Bs and messed up on the AP exams for both of those and got rejected from the program. Now I have an empty slot in my senior year schedule, but I don’t want admissions to think I’m slacking or something (I took 5 APs junior year), so what should I fill it with?

(I ALSO don’t want them to think I’m just trying to fill my transcript with random APs, though. Obviously I don’t wanna take anything I’m not actually curious about)

For context: I’m an art kid, will probably submit a supplement. I took all AP arts except Art History (which I don’t think my school offers) and AP 3D Art (which I have 0 exp with). I want to major in something STEM though (honestly undecided) and I’ve already taken Bio and Chem.

My GPA is low for the Ivies, it’s like a 3.7

My current schedule is this:

  1. macro/micro (Econ)
  2. gov (i’ve taken human geo but not gov)
  3. stat
  4. compsci
  5. lit
  6. ??? (our school only has 6 classes)

I haven’t taken AP Spanish. Although I’m completed up to Spanish 5, I really don’t want to since the class at our school is super hard and I’ve never been good at it.

I also wonder if it’s breaking continuity not to take an Art my senior year (my art teacher does offer honors art classes, it’s just a step down).

This leaves the option of Psychology or Environmental Science. Which would you recommend?

Have you heard of Bayes Theorem? It’s a theory in probability, usually stated on complex-looking math terms, but the essential meaning is that we can adjust our estimates of the probability of an event with new information. Whatever your initial thoughts about your chances for Ivies, being turned down for dual enrollment ought to help you adjust your expectations of getting that thick envelope. Which isn’t to say you shouldn’t apply, but you ought to devote even more time than you planned before to finding matches and a safety you’d be happy with.

Either Psych or Environmental Science would be perfectly fine to take. If you want to be a STEM major I’d lean towards the science course.
