I want to do something easier this year too, but have four vegetarians. I’ll still make a ham, hash brown casserole, and Hawaiian rolls. It’s the rest I want to simplify. I feel like I need a pasta dish to round things out.
Veggie lasagna is nice as you can make it ahead and just pop in the oven. It isn’t last minute like other pasta dishes.
I have a beautiful casserole of cannelloni frozen --or make stuffed seashells–they freeze beautifully. You can serve with a marinara and a sausage sauce for the meat eaters. One thing to know that whatever you make for the vegetarians the meat eaters will want some of so be sure to make enough for everyone. I was a vegetarian for 35 years…
^ I agree- since I started adding sides for vegetarians around 8 years ago, I’ve been buying smaller and smaller turkeys and hams and still have leftover meat. . I’d like to eventually stop serving meat but that’s for a different discussion.

I was intrigued by pineapple casserole mentioned by @abasket in post #1. Looked online and found a recipe to try for something new and different. Both DH and DD crinkled up their noses at the cheese-pineapple combination but I said I didn’t care and made it anyway. It ended up being a huge hit for all 3 generations and there wasn’t a speck left in the dish. Thanks for a great suggestion!!
Dinner was easy for me this year because did Prime Rib (which DH handled… first time for us). I only had to do pie baking (Mrs Smith’s), mashed potatoes, sweet potatoes (in oven for last hour with roast), green beans (in steamer), and red cabbage (from refrigerator - it’s a tradition from my mother’s German family - adds nice color). maple bacon brussels sprouts (actually made prior night for family dinner, but wanted mom to try them) and bread.
@helpingmom40 I’m so happy to hear that! It’s a weird combo but somehow it works! I always loved leftovers too!
