Unschooling is not anything goes, parents still play a strong role in it. The difference with unschooling is that it rejects the rigid, this is what you will do now kind of thing that is the hallmark of traditional schooling for example you learn to read in kindergarten or 1st grade, this time of the year we will study the structures of a cell, now is time to study penmenship.
