A few schools such as Purdue and U Missouri have options that provide acceptance to their Vet programs to high school applicants who meet their criteria:
[College of Veterinary Medicine - Pre-Veterinary Medicine (PVM) and AgScholars Programs](http://vetmed.missouri.edu/pre-vet-scholars.htm)

However, their deadlines are quite late - April or May, and decisions are announced by July as to whether or not the student was accepted to the guaranteed program. My question is how do you make your commitment to a school and withdraw all other offers without knowing whether or not this offer will be made? Is it legit to accept at another school and keep applications at schools like these still active till they announce their decision?
