How do I avoid MATH mistakes?

I just finished a practice test and got a 680

If I didn’t make careless mistakes (misreading questions, misreading diagrams etc) I would have gotten a 790.

I know I have the ability to get a high 700s because I have done so in previous practice tests.

How do I stop this from happenening on test day?

Be more organized with your work, read the question/diagram multiple times before solving the problem.

What do you mean by more organized?

Also, do you advice checking questions after solving them or checking after doing all the questions?

I had a similar problem, consistently getting 1 or 2 wrong due to me reading parallel for perpendicular or finding x instead of y.

What worked for me (at least judging from my last practice test) is Underlining.

Underline the important points, and circle what the question asks you to find.

Also try to focus on the question and try not to rush.

I will try underlining and circling

Organized as in, legible, steps in order, easy to follow, etc. I missed an AIME problem once due to misreading my handwriting (3 instead of 2).

I might find it easier solving all the problems, then using remaining time to check. If you do the other option, you might run out of time on later problems.
