How many APs is too many?

I am taking the most rigorous courses available to me next year. Only 3 APs are available and I am taking all 3. Is that a lot usually?

No. 3 Aps is not a lot if that is the total. But if you have no other options, it is what it is.

Agreed. It’s not “a lot,” but you can’t take what is not offered. As long as you are taking the most rigorous courses available to you, there’s nothing else needed.
