No. Apply EA to as many as you like.

It depends on the school/scholarship
Rolling admissions is only for schools that will give you a decision some period of time (could be two weeks, could be two months) after your application is in. For those schools, you might apply in September or October and hear a decision before the application deadlines for other schools. Most really competitive schools don’t have this.
Some schools may have a deadline of something like November 1 or December 1 to apply and be considered for a merit scholarship, and a later deadline to apply without merit scholarship consideration. They may or may not even have EA, but if they do have an EA deadline that is the same as the merit scholarship deadline, it can be worth applying EA if you’re already going to be applying early anyway.
Note that many rolling admissions simply means there will be batches of admissions over a period of time rather than a fixed date for announcement. Rejection notice may come out much later. Some school’s do guarantee a few weeks of decision time frame though.
