I know that 3 is the standard number of SAT IIs most selective colleges ask for. If I have taken courses that prepare me for more than 3, should I take all of the ones I feel prepared for or would that be overdoing it?

What subjects do the colleges you are applying to want?

Take the three you feel best about the first time around, and then decide on the others.

Most selective colleges and universities require 2 SSATs. It’s only a couple of Ivies and some peculiar liberal arts that still require 3. Mind you, it won’t take long before they join the majority.

Back to your question,
if you are sure you can score 750+ without wasting much time cramming, take as many as you can, it might look impressive.
