Is it true that Stanford, much more than Ivies, values creativity in its applicants? Also, are supplement essays and extracurriculars the best place to show this?

Stanford definitely values creativity in applicants, but I think most other top schools do also. The best way to show creativity, I think, is in what you do, more than in what you say (though you would be describing the creative things you have done, and expect to do in the future, in your essays).

Well I’m planning to wrie one of my supplements about creative hobby/passion of mine, otherwise my extracurriculars are moderately creative.
